Kefalotiri “Flegga” is a hard cheese produced by pasteurized goat/sheep milk with excellent natural attributes, rich taste, flavour and aroma.
It is slightly salty with a solid mass and hard outer surface.
Kefalotiri is a popular cheese, having its roots from the Byzantine era.
It has a high nutritional value, rich in protein, calcium and vitamins A, D and E and nutrients that are essential for a healthy diet.
Tips: aste it grated on pasta or salads, fry it with honey and sesame (Greek saganaki), or raw, accompanied by a cold white wine, like Assyrtiko of Santorini island!
